Ingredients  

  • 2 slices Whole-grain bread, toasted 2.3oz
  • cup 1% Low-fat cottage cheese 5.3oz
  • 2 tbsp Avocado, chopped 1.1oz
  • ½ cup Baby spinach 0.3oz
  • 5 Cherry tomatoes, hlaved 3oz
  • tbsp Red onion, chopped 0.5oz
  • 1 dash Black pepper

Steps 

  1. Spread cottage cheese over two slices of warm toast.
  2. Place avocado, baby spinach, tomatoes and onion in a bowl. Season to taste and mix gently.
  3. Spoon avocado mixture on to slices of bread to serve.
