Cheese, tomato & avocado sandwich

Ingredients  

  • 2 tbsp Avocado 1.1oz
  • 2 slices Whole-grain bread 2.3oz
  • cup Cheddar cheese, reduced-fat, shredded 1.3oz
  • tbsp Red onion, chopped 0.5oz
  • 2 Romaine lettuce leaves, inner 0.4oz
  • 5 Cherry tomatoes, halved 3oz

Steps 

  1. Lightly mash avocado and season to taste.
  2. Spread avocado mixture on one slice of bread. Add cheese, onion, lettuce, and tomato.
  3. Place other slice of bread on top to make a sandwich.
  4. TIP: For cooler days, toast bread before adding ingredients or toast sandwich in sandwich press for a warm lunch.
