Beet & feta salad

Ingredients  

  • 4.4 oz Instant brown rice, cooked
  • 1 cup Arugula 0.7oz
  • 2 small Beets, cooked, sliced 3.5oz
  • 2 tbsp Fresh mint 0.1oz
  • ¼ cup Feta cheese, reduced-fat, crumbled 1.3oz
  • ½ cup fresh Parsley 1.1oz
  • 1 tbsp Red wine vinegar 0.2oz
  • 1 dash Black pepper
  • 1 tbsp Shelled pumpkin seeds 0.3oz

Steps 

  1. Prepare rice according to instructions.
  2. Add rice into a serving bowl along with arugula, beet, mint, feta and parsley. Drizzle with vinegar and season to taste. Gently mix.
  3. Sprinkle with seeds to serve.
  4. TIP: You can purchase pre-cooked beets in most supermarkets.
