Lime shrimp taco with salsa
Ingredients
- 1 tsp Extra virgin olive oil (0.2oz)
- ½ lime juiced (1.2oz)
- ½ tsp Mexican seasoning blend (0.1oz)
- 5 oz Shrimp raw, (5oz)
- 1 Whole-wheat tortilla or two mini tortillas (1.4oz)
- 2½ tbsp Salsa (1.6oz)
- 1 leaf Romaine lettuce outer, shredded (1oz)
- ¼ cup Carrot shredded, (1oz)
- ½ cup Snow peas chopped (2.8oz)
- ¼ cup Red bell pepper chopped, (1.3oz)
Steps
- In a bowl combine oil, lime juice and seasoning blend. Add shrimp to the bowl and fully coat in the marinade.
- Heat a medium non-stick frying pan over medium-high heat. Add the marinated shrimp and stir-fry for 2 to 3 minutes each side until cooked through. Remove from pan.
- Add the tortilla to the pan and cook for 20 to 30 seconds each side until warmed through. Place on plate.
- Spoon the salsa over the tortilla. Top with lettuce, carrot, snow peas, bell pepper and shrimp. Season to taste and serve.
- TIP: For a quicker option buy cooked shrimp and microwave the tortilla.
