Turkey, avocado & pickled salad sandwich
Ingredients
- ¼ medium Zucchini (1.7oz)
- ½ medium Cucumber (3.5oz)
- ¼ medium Red onion finely chopped (0.8oz)
- 1 tbsp Red wine vinegar (0.5oz)
- 1 tbsp Fresh lemon juice, s Fresh lemon juice, (0.5oz)
- 1 dash Black pepper
- 2 slice Whole-grain bread (2.3oz)
- 2 tbsp mashed Avocado (1.1oz)
- 3 oz Turkey breast, cooked (3oz)
- 1 handful Baby spinach (0.8oz)
Steps
- Shred zucchini and cucumber, or slice into thin rounds or ribbons. Toss into a bowl along with onion, vinegar, lemon juice and pepper. Mix to combine. Allow to sit whilst making sandwich, or longer if possible.
- Spread one slice of bread with avocado and season with pepper. Place turkey on top, followed by baby spinach.
- Drain any excess liquid from the pickled cucumber mix or use tongs to place mix on baby spinach. Top with second slice of bread.
- TIP: The longer you allow the pickled salad to sit, the more the vinegar will soak in for a stronger taste.
