Greek-style chicken, quinoa & spinach salad

Ingredients  

  • 1⅓ oz Quinoa uncooked 1.3oz
  • 2 handfuls Baby spinach 1.7oz
  • ¼ medium Cucumber diced 1.8oz
  • ¼ medium Red bell pepper raw chopped 1oz
  • 1 tsp Capers drained 0.1oz
  • 2 tsp Extra virgin olive oil 0.3oz
  • ½ medium Lemon juiced 1.5oz
  • 2 oz Chicken breast cooked sliced 2oz
  • ¼ cup Parsley fresh 0.5oz

Steps 

  1. Cook quinoa according to packet instructions. Once cooked, allow to cool.
  2. Combine spinach, cucumber, red pepper and capers in a bowl. Drizzle with olive oil, lemon juice and toss to combine.
  3. Top salad with cooked chicken, cooled quinoa, parsley and serve.
  4. TIP: If convenient, use rotisserie chicken with skin and fat removed. For cooler days, serve quinoa warm.
