Mediterranean-inspired bolognese with green beans
Ingredients
- 2 tsp Extra virgin olive oil 0.3oz
- 4 tbsp Red onion chopped 1.4oz
- ½ tsp Garlic minced
- 3 oz Ground beef extra lean 3oz
- 1 dash Black pepper
- ¼ Eggplant unpeeled diced 4.8oz
- ¼ medium Red bell pepper raw chopped 1oz
- 1 medium Zucchini diced 6.9oz
- 1 medium Tomato whole diced 4.3oz
- 2 tsp Tomato paste 0.4oz
- ⅓ cup Low-sodium vegetable broth 2.6fl oz
- 1 cup Green beans trimmed chopped 3.5oz
Steps
- Heat olive oil in a non-stick frying pan to medium heat. Add onion and garlic and cook, stirring, for 2 to 3 minutes. Add the ground beef and cook, stirring with a wooden spoon to break up any lumps, for 6 to 8 minutes or until beef has browned. Season to taste.
- Add eggplant, pepper, zucchini, tomato, tomato paste and broth and cook for a further 12 to 14 minutes, stirring occasionally. Add a little water if the mixture is too dry.
- Meanwhile steam or boil green beans for 4 to 5 minutes, or until cooked to your preference.
- Serve bolognese with green beans on the side.
