Heat olive oil in a non-stick frying pan to medium heat. Add onion and garlic and cook, stirring, for 2 to 3 minutes. Add the ground beef and cook, stirring with a wooden spoon to break up any lumps, for 6 to 8 minutes or until beef has browned. Season to taste.
Add eggplant, pepper, zucchini, tomato, tomato paste and broth and cook for a further 12 to 14 minutes, stirring occasionally. Add a little water if the mixture is too dry.
Meanwhile steam or boil green beans for 4 to 5 minutes, or until cooked to your preference.
Serve bolognese with green beans on the side.
