Using a fork, lightly whip the ricotta with the almond butter.
Top the toast with half the ricotta almond mixture and a few slices of apple. Sprinkle with cinnamon. Serve the remaining ricotta mixture and apple slices on the side.
TIP: Add a drizzle of honey if you have Sweets to spare for the day.
