Beef, green bean & mushroom stir-fry

Ingredients

  • ½ 8.5oz pouch Instant brown rice, cooked 4.2oz
  • 1 tsp Extra virgin olive oil 0.3oz
  • 1 tsp Garlic, mined 0.1oz
  • 1 tsp Ginger, minced 0.1oz
  • 6 oz Beef tenderloin steak, any grade, very lean, thin strips
  • 3 cups Mushrooms slices 7.4oz
  • 2 cups Green beans, trimmed 7.1oz
  • 2 tsp Soy sauce, low-sodium 0.3oz

Instructions

  • Prepare rice according to packet instructions.
  • Heat oil in a wok or large skillet over high heat. Add the garlic, ginger and beef and stir-fry for 2 minutes, or until browned. Add the mushrooms, green beans and soy sauce and cook for 2 minutes, or until green beans are just tender. Add half of the rice pouch to the skillet and stir to combine. (Store leftover rice in the fridge for another meal).
  • Divide stir-fry between two serving plates and enjoy.
