Beef, green bean & mushroom stir-fry

Ingredients  

  • ½ 8.5oz pouch Instant brown rice, cooked 4.2oz
  • 1 tsp Extra virgin olive oil 0.3oz
  • 1 tsp Garlic, mined 0.1oz
  • 1 tsp Ginger, minced 0.1oz
  • 6 oz Beef tenderloin steak, any grade, very lean, thin strips
  • 3 cups Mushrooms slices 7.4oz
  • 2 cups Green beans, trimmed 7.1oz
  • 2 tsp Soy sauce, low-sodium 0.3oz

Steps 

  1. Prepare rice according to packet instructions.
  2. Heat oil in a wok or large skillet over high heat. Add the garlic, ginger and beef and stir-fry for 2 minutes, or until browned. Add the mushrooms, green beans and soy sauce and cook for 2 minutes, or until green beans are just tender. Add half of the rice pouch to the skillet and stir to combine. (Store leftover rice in the fridge for another meal).
  3. Divide stir-fry between two serving plates and enjoy.
