Cajun shrimp bowl

Ingredients

  • 6 oz Cooked shrimp, peeled 6oz
  • 1 Lime, juiced 2.4oz
  • 2 tsp Cajun seasoning 0.1oz
  • 1 8.5 oz pouch Instant brown rice, cooked 8.5oz
  • 4 cups Baby spinach 2.6oz
  • 2 medium whole Tomato, chopped 8.7oz
  • 4 tbsp Avocado 2.1oz

Instructions

  • Prepare the Cajun shrimp bowl according to recipe instructions.
  • Enjoy one serving for lunch and store the leftover serving in an airtight container in the fridge for later in the week.

  • Place the shrimp into a bowl and add the lime juice and cajun seasoning. Toss to coat.
  • Prepare the rice according to the packet instructions.
  • Divide the spinach between two serving bowls. Add the rice, tomato and seasoned shrimp. Toss to combine. Add the avocado and an extra squeeze of lime juice. Serve.
