Cheesy breakfast burrito

Ingredients

  • 5 Cherry tomatoes, cut in half 3oz
  • 2 tbsp Avocado, diced 1.1oz
  • tbsp Red onion, chopped 0.5oz
  • 1 dash Black pepper
  • 1 large Egg 1.8oz
  • 1 Whole-wheat tortilla 1.4oz
  • 2 tbsp Cheddar cheese, reduced-fat, shredded 0.5oz
  • 1 small Fruit, any type 3.5oz

Instructions

  • In a bowl, mix together tomatoes, avocado, red onion and pepper. Set aside.
  • Lightly whisk egg. Season to taste. Pour into a non-stick pan over medium heat and continue to stir until egg is cooked through and light and fluffy.
  • Place scrambled egg in the center of the tortilla, sprinkle with cheese and top with avocado mixture. Roll into a tasty burrito.
  • Enjoy with a piece of fruit, or save it for a mid-morning snack.
