Chicken lettuce cups

Ingredients

  • 1 4.4oz cup Instant brown rice, cooked 4.4oz
  • 2 tsp Extra virgin olive oil 0.3oz
  • 6 oz Ground chicken, raw 6oz
  • 2 tsp Garlic, minced 0.2oz
  • 1 cup White onion, chopped 5.6oz
  • 1 ½ tbsp Hoisin sauce 0.8oz
  • 1 cup shredded Carrot 3.9oz
  • 8 leaves Iceberg lettuce 2.3oz

Instructions

  • Prepare rice according to packet instructions.
  • Heat 1 teaspoon of oil in a nonstick skillet over medium-high heat. Add the ground chicken and cook, stirring occasionally, for 3 to 5 minutes until cooked through. Transfer to a bowl and set aside.
  • Return the skillet back to the heat. Add 1 teaspoon of oil, along with the garlic and onion. Fry for about 5 to 7 minutes, until onions are tender, stirring frequently with a wooden spoon.
  • Return chicken to the pan, add the hoisin sauce, rice and carrots. Stir to combine and heat through.
  • Divide the lettuce leaves between two serving plates and spoon chicken mixture into each leaf. Enjoy!
