Chicken lettuce cups

Ingredients  

  • 1 4.4oz cup Instant brown rice, cooked 4.4oz
  • 2 tsp Extra virgin olive oil 0.3oz
  • 6 oz Ground chicken, raw 6oz
  • 2 tsp Garlic, minced 0.2oz
  • 1 cup White onion, chopped 5.6oz
  • 1 ½ tbsp Hoisin sauce 0.8oz
  • 1 cup shredded Carrot 3.9oz
  • 8 leaves Iceberg lettuce 2.3oz

Steps 

  1. Prepare rice according to packet instructions.
  2. Heat 1 teaspoon of oil in a nonstick skillet over medium-high heat. Add the ground chicken and cook, stirring occasionally, for 3 to 5 minutes until cooked through. Transfer to a bowl and set aside.
  3. Return the skillet back to the heat. Add 1 teaspoon of oil, along with the garlic and onion. Fry for about 5 to 7 minutes, until onions are tender, stirring frequently with a wooden spoon.
  4. Return chicken to the pan, add the hoisin sauce, rice and carrots. Stir to combine and heat through.
  5. Divide the lettuce leaves between two serving plates and spoon chicken mixture into each leaf. Enjoy!
