Chicken lettuce cups
Steps
- Prepare rice according to packet instructions.
- Heat 1 teaspoon of oil in a nonstick skillet over medium-high heat. Add the ground chicken and cook, stirring occasionally, for 3 to 5 minutes until cooked through. Transfer to a bowl and set aside.
- Return the skillet back to the heat. Add 1 teaspoon of oil, along with the garlic and onion. Fry for about 5 to 7 minutes, until onions are tender, stirring frequently with a wooden spoon.
- Return chicken to the pan, add the hoisin sauce, rice and carrots. Stir to combine and heat through.
- Divide the lettuce leaves between two serving plates and spoon chicken mixture into each leaf. Enjoy!
