Chicken stir-fry with greens

Ingredients

  • 1 tsp Extra virgin olive oil 0.2oz
  • 1 tsp Ginger, minced 0.1oz
  • 2 tsp Garlic, minced 0.2oz
  • 3 oz Chicken breast, raw, sliced 3oz
  • ½ bunch Baby broccoli broccolini, trimmed and cut into 2-inch pieces 4.9oz
  • ¼ cup Frozen peas 1oz
  • 1 medium Zucchini, sliced 6.9oz
  • 1 medium Green onion, thinly sliced 0.5oz
  • 1 tsp Sesame seeds 0.1oz

Instructions

  • Heat olive oil in a large non-stick frying pan or wok over medium-high heat. Add ginger, garlic and chicken and stir-fry for 5 minutes.
  • Add the broccolini, peas and a splash of water to the pan and stir fry for a further 2 minutes.
  • Add zucchini and green onion to the pan. Stir-fry for 1 minute, or until the chicken is cooked through.
  • Sprinkle with sesame seeds to serve.
