In a small bowl, combine cheddar cheese and ricotta. Spread over one half of the wrap. Top with tomato and fold in half.
Place into a sandwich press, or a non-stick skillet over medium-high heat. Toast until the cheese has melted and the tortilla is lightly golden.
Serve quesadilla with lettuce and mashed avocado.
