4ozBeef tenderloin steak, any grade, very lean, finely sliced4oz
2 ½tbspRed bell pepper, chopped0.8oz
1cupBroccoli florets2.5oz
4tbspCarrots, shredded1oz
½tbspSoy sauce, low-sodium0.3oz
Instructions
Heat oil over high heat in a wok or non-stick frying pan. Add garlic, ginger, chili pepper (if using) and beef and cook until the meat is just brown. Spoon into a bowl.
Return the wok to the heat and add the bell pepper, broccoli and carrot. Cook, while stirring, for 3 to 4 minutes. Spoon the meat and any juices back into the pan and cook for a further 2 mins.
Add the soy sauce and stir to warm through.
Serve immediately for dinner.
TIP: Feel free to add some fresh chili to add a little spice.
