Greek pasta salad

Ingredients

  • 3 oz Whole-wheat pasta uncooked (3oz)
  • 1 Tbsp Extra virgin olive oil 0.5oz
  • 2 tsp Balsamic vinegar 0.4oz
  • 1 medium Cucumber quartered (7.1oz)
  • 1 cup Cherry tomatoes halved (5.3oz)
  • cup Feta cheese reduced-fat, crumbled (3.5oz)

Instructions

  • Boil pasta according to packet instructions. Rinse under cold water, place into a large bowl and allow to cool.
  • In a small bowl, whisk together the oil and vinegar.
  • Once the pasta has cooled, add the cucumbers, tomatoes and feta cheese. Toss to combine.
  • Divide the pasta salad between two serving bowls and drizzle over the dressing.
  • TIP: If you have dried oregano in your pantry, add a dash to the dressing before whisking.
