Greek pasta salad

Ingredients  

  • 3 oz Whole-wheat pasta uncooked (3oz)
  • 1 Tbsp Extra virgin olive oil 0.5oz
  • 2 tsp Balsamic vinegar 0.4oz
  • 1 medium Cucumber quartered (7.1oz)
  • 1 cup Cherry tomatoes halved (5.3oz)
  • cup Feta cheese reduced-fat, crumbled (3.5oz)

Steps 

  1. Boil pasta according to packet instructions. Rinse under cold water, place into a large bowl and allow to cool.
  2. In a small bowl, whisk together the oil and vinegar.
  3. Once the pasta has cooled, add the cucumbers, tomatoes and feta cheese. Toss to combine.
  4. Divide the pasta salad between two serving bowls and drizzle over the dressing.
  5. TIP: If you have dried oregano in your pantry, add a dash to the dressing before whisking.
