Ingredients

  • 2 slices Whole-grain bread 2.3oz
  • 2 tsp Pesto, low-sodium 0.3oz
  • ½ cup Canned artichoke hearts 3oz
  • cup Part-skim mozzarella cheese, shredded 1.3oz
  • 1 2-second spray Olive oil spray 0.1oz

Instructions

  • Preheat a sandwich press or non-stick skillet to medium heat.
  • Spread 1 teaspoon of pesto onto each slice of bread. Top with the artichokes and then the cheese. Add the remaining slice of bread.
  • Spray the sandwich press or skillet with oil. Toast the sandwich until bread is toasted and the cheese is melted.
