Shepherds Pie

This version of shepherd's pie uses my Thanksgiving leftovers.

Ingredients

  • 1 lb ground beef
  • 1 can condensed cream of mushroom soup
  • 2 cups leftover carrots and onions
  • 1 can peas
  • 2 cups leftover mashed potatoes and turnips

Instructions

  • Preheat oven to 350˚F.
  • Brown ground beef in large skillet.
  • Add carrots and onions and heat until warm.
  • Add condensed soup and mix and then add peas.
  • Mix well and heat through, then pour mixture into a 8x8 or 2-quart casserole dish.
  • Microwave mashed potatoes and turnips for a minute or two to take the chill off and then spread over meat mixture in casserole dish.
  • Bake in 350˚F oven for 20-25 minutes until warmed thru and potatoes start to brown a little on top.
