Preheat the oven to 350°F. Place two large squares of parchment paper onto a baking sheet.
Place the zucchini noodles in the middle of each piece of parchment paper. Top the zucchini noodles with the carrots. Place the salmon on top of each pile of vegetables and spoon over the teriyaki sauce.
Take each corner of the parchment paper squares and fold them into the center to form two parcels, then tuck under to seal. Place baking sheet into the oven and bake for 12 to 15 minutes.
Meanwhile, prepared the noodles according to packet instructions.
Once cooked, remove parcels from the oven and carefully place the salmon and vegetables onto two serving plates. Sprinkle over the almonds and serve with the noodles.
