3ozTurkey breast, cooked(3oz)
1handfulBaby spinach(0.8oz)
Instructions
Shred zucchini and cucumber, or slice into thin rounds or ribbons. Toss into a bowl along with onion, vinegar, lemon juice and pepper. Mix to combine. Allow to sit whilst making sandwich, or longer if possible.
Spread one slice of bread with avocado and season with pepper. Place turkey on top, followed by baby spinach.
Drain any excess liquid from the pickled cucumber mix or use tongs to place mix on baby spinach. Top with second slice of bread.
TIP: The longer you allow the pickled salad to sit, the more the vinegar will soak in for a stronger taste.
