Walnut & beet salad

Ingredients

  • cup Instant brown rice, cooked 5oz
  • 2 handfuls Baby spinach 1.7oz
  • 1 small Beets, pre-cooked and sliced 1.8oz
  • 1 ½ tbsp Red onion, chopped 0.5oz
  • ½ cup Parsley fresh, leaves 1.1oz
  • ¼ cup Feta cheese, reduced-fat, crumbled 1.3oz
  • 1 tbsp Balsamic vinegar 0.6oz
  • 1 dash Black pepper, ground
  • 4 Walnuts, chopped 0.3oz

Instructions

  • Prepare rice acording to packet instructions. Place rice into a serving bowl. Add spinach, beet, onion, parsley and feta.
  • Drizzle with vinegar and season to taste. Gently mix. Sprinkle walnuts on top and serve.
  • TIP: You can purchase pre-cooked beets in most supermarkets.
