Banana-whipped ricotta toast

Ingredients  

  • 1 extra small Banana, mashed 2.9oz
  • 3 oz Part-skim ricotta cheese
  • 1 slice Whole-grain bread, toasted 1.1oz
  • ½ tsp ground Cinnamon
  • 1 tbsp Pumpkin seeds (pepitas) 0.3oz

Steps 

  1. In a small bowl, lightly whip the banana and ricotta with a fork.
  2. Spread banana ricotta mixture over warm toast. Sprinkle over cinnamon and pumpkin seeds.
  3. TIP: If you have Sweets to spare, drizzle over 1 teaspoon of honey.
